This is Fujita from SEAGAIA public relations department and newsletter editor. "Himuka," a Japanese restaurant that just opened on the 13th of this month, offers a variety of dishes, from traditional Japanese kaiseki cuisine to sushi and hot pot. Each dish is carefully prepared, centered around the essence of Japanese cuisine and the bounty of Miyazaki, allowing you to feel the richness of this region with every bite. This time, we went to experience its intriguing charm for ourselves!

Stepping inside, you'll find yourself in a calm space filled with soft light and the warmth of wood. Amidst the pleasant hustle and bustle, there's a relaxed atmosphere that heightens anticipation for the delicious meal that's about to begin.

The experience was a kaiseki meal exclusive to the accommodation plan.

The meal I experienced this time was the "Hitotsuba Kaiseki," which is offered as part of a dinner-inclusive accommodation plan. It consisted of nine dishes in total, from appetizers to dessert, and each dish offered a different flavor that layered together, leaving a pleasant aftertaste until the very end.
This time, I'll introduce three items that left a particularly strong impression on me.

[Appetizer] Smoked seared bonito with ponzu mousse
|
This dish combines fragrant smoked bonito with a light and tangy ponzu mousse. The moment you open the lid, the aroma of smoke wafts up, instantly raising your expectations. I took the opportunity to point my smartphone and film a video! You should all definitely try it!

The moist flesh is infused with the aroma of smoke, and the squeeze of kumquat adds a refreshing lightness. Furthermore, the combination of ponzu mousse and yuzu shichimi spice adds depth to the flavor and a pleasant aftertaste.
The smoky aroma, acidity, sweetness, and subtle spiciness all come together in a way that changes with each bite, making it a truly memorable dish.

Next up is the star of the show! Miyazaki beef, perfectly grilled over charcoal. First, we savored the meat's natural flavor as is. Adding smoked soy sauce deepened the richness, and a touch of yuzu pepper gave it a crisp, refreshing aftertaste. The combinations were fantastic, beautifully highlighting the sweetness of the Miyazaki beef fat!

[Meal] Organic rice and Miyazaki beef simmered in soy sauce [Pickles] Three kinds of pickles
|
The fluffy, perfectly cooked rice is "Organic Miyamoto Rice" from Shintomi Town, Miyazaki Prefecture. It's pale, glossy, and has a gentle sweetness that pairs well with Japanese cuisine. The Miyazaki beef shigure-ni (simmered beef) and pickles served alongside the rice are also superb! The flavorful Miyazaki beef shigure-ni, with its sweet and savory seasoning, permeates the rice beautifully, making you want to keep eating! (Honestly, I wanted seconds...)
The chef's special pickles—lightly pickled mustard greens with hebesu citrus, radish with Hyuganatsu citrus, and sweet simmered charcoal-grilled chicken and shiitake mushrooms—each had a different flavor, making them a satisfying final dish that could be enjoyed without getting bored.

I ordered an extra. Absolutely delicious seared meat sushi!

Lastly, I'd like to recommend the Miyazaki beef aburi sushi. It comes in three cuts: thigh, loin, and fillet, seared over charcoal, and the live preparation right in front of you at the counter is also a major draw.

This time, I topped it with sea urchin. The rich flavor of the sea urchin combined with the freshly seared Miyazaki beef, filling my mouth with deliciousness. Pure bliss...

" Himuka" is a Japanese restaurant where the abundant blessings of Miyazaki and traditional Japanese techniques are woven together.
I thoroughly enjoyed a relaxing and luxurious time, appreciating the meticulous work put into each dish and the comfortable atmosphere.
